How to Make a Cheese and Egg Toastie
I did have an internal debate with myself on whether to share these sandwiches with you or not. Lets face it they are not very attractive.
They kind of resemble a hot mess . . . but sometimes that can be a good thing. Sometimes the hotter and messier, the better!
I've never experienced a hot mess of something edible that I did not enjoy and I suspect that it is much the same with you!
I am ever so fond of food that you can really tuck into with gusto. Filled with lots of lovely flavours and textures and buttery goodness.
We all have days when we don't really want to go through elaborate supper preparations. Nights when we just want something hot, tasty and quick!
These delicious, albeit unattractive, sandwiches fit the bill perfectly! They are simple, quick to make and incredibly fabulously tasty!
We both love fried egg sandwiches, although more often than not Todd will enjoy his on plain white bread. It is I who likes my bread toasted.
When I am eating something like this I want it to be on a slice of bread that can stand up to the filling and hold it in, not fall apart in my hands.
We both love grilled cheese sandwiches, or "Cheese Toasties" as they are lovingly called here in the UK. How can you not love something called a Toastie???
It just has something very comforting about it. It makes you think of toasty things like warm fires and home sweet home, love and family and all things nice.
We both love cheese omelets. Eggs and cheese have a real natural affinity for each other. We like them with toast and hash browns on the side.
There used to be a place in Alliston, Ontario back in Canada that made the most beautiful omelettes. You could get them filled with everything under the sun, but sometimes you just want simple. Know what I mean?
Why not combine the idea of eggs and toast and grilled cheese sandwiches with the result being a delicious sandwich we would both love???
I am always telling my daughter that if you have a dozen eggs in your refrigerator you have the makings of a meal or two or three!
They are one of the most versatile and basic ingredients you can have in the kitchen. Fried, scrambled, made into omelettes.
Hard boiled and used to make an egg salad sandwich, or deviled eggs. You really can't go wrong with eggs.
These sandwiches ended up being incredibly edibly tasty, if not more than a bit messy! If I did them again, I might cook the eggs a bit more so they weren't quite as runny. These were very delicious, mess and all.
I used a combination of Cheddar Cheese and Red Leicester Cheese. Red Leicester is orange in colour the cheddar was white. You can use what kind of cheese you like. A pepper jack would be lovely!
Of course I used only free range organic eggs . . . RSPCA approved and as fresh as possible. When I am eating eggs like this, those are my pedantic requirements!
I refuse to support an industry that is cruel in its practices. I would rather do without something than support the inhumane treatment animals. It is simple as that.
When I was young I think I lived in a kind of ignorant bubble. I really didn't give a lot of thought as to how things got from the farm to my plate. I am much more conscious of it now and I care a great deal about the provenance of what I choose to eat.
I cooked some mini potato waffles on the side . . . which went down really well. But hash brown patties would also be nice, or even fried leftover potatoes.
Many moons ago, back in the late 1970's my ex husband was transferred with his job to a base just outside of Medicine Hat Alberta. We moved there from just outside of Edmonton and believe it or not, it took our furniture three weeks to get there.
I spent three weeks in a motel room with two todders, a newborn baby and a cat. Good times. NOT. It was a very rough three weeks. The only saving grace was the restaurant right next to the motel.
They served the most beautiful hashbrowns. They looked like fried spaghetti. That place was packed every morning with hungry breakfasters, all of them enjoying those fabulous hashbrowns. Forty years later I am still thinking of them.
I have never tasted anything like them since, and have often wondered what their secret was. Taste memories are funny things. I am not sure what but the memories of things like this don't make them seem like they tasted better than they actually were!
In any case these sandwiches were amazing. I am not sure these could get much better . . . unless you added a few rashers of streaky bacon.
Oh boy, that would sure be good I am thinking . . . I can almost taste them now. A few rashers of crisp bacon somehow manage to elevate everything into something even tastier.
These sandwiches would then be Fried Egg, Bacon & Cheese Toasties. Yum yum! Now that's what I call a mouthful!
This was a rare treat for us. I have had an incredibly bad back lately and not been able to stand for long hours at a time. These meant I didn't have to. Its nice to have a few quick supper ideas like this up your sleeves for times like this. I don't think I could stand eating a TV dinner these days. Ugly or not, these were an acceptable substitute for fast food.
Fried Egg & Cheese Toasties
Its not pretty but it is pretty delicious. A once in a blue moon treat! We like to have either hash browns or tater tots, etc. on the side. Sometimes you just want a simple supper and this fits the bill.
ingredients:
- 4 large free range eggs
- 4 slices of bread
- 4 slices of cheese (I used strong cheddar and red Leicester cheeses)
- Soft butter for spreading and frying
- salt and black pepper to taste
instructions:
- Melt a bit of butter in a large skillet. Once it begins to foam add the eggs, taking care not to break the yolks. Cook according to your preference, flipping them over once. We like the yolks runny and the edges crispy. Season with salt and black pepper and remove to a plate.
- Wipe out the skillet. Butter your slices of bread with the softened butter on one side of each slice. Place two slices into the skillet buttered slice down. Top with one slice of cheese, and then the two eggs. Place the other slice of cheese on top and then the final slice of bread, buttered side up.
- Cook until golden brown on the bottom of the sandwiches. Carefully turn them over and brown them on the other sides.
- Serve hot and cut on the diagonal.
